Under Chef Dibyendu Roy’s curation, Taj Fort Aguada Resort & Spa has the following modak varieties for sale. To quote the chef: Our Locavore Modak Collection celebrates local flavours and traditions. Each modak is made with spices and dehydrated vegetables from our community, honouring the land and its farmers. White Rajgiri: white chocolate with puffed amaranth. Moringa Tea: dried drumstick leaves, tea, and mawa. Tarvati Kokum: Goan chilli, fresh dates, and kokum. Koi Jaggery: Puffed rice with Goan jaggery. Goan Cashew and Garri: dry coconut, nuts, and poppyseed. Enjoy these unique creations, crafted with love and local ingredients.

At Taj Holiday Village Resort & Spa, Chef Somnath Rakesh drives Vogue modaks. Modaks that appeal to today’s generations who are extremely health conscientious but at the same time value their tradition. To quote the chef: We strive to curate products that are sugar-free where the sweetness comes from dates, figs, or honey; lactose-free using almond milk, soy milk, oat milk, rice milk, or coconut milk—coconut milk being the most sought-after alternative for festivities and modaks. Gluten-free options by using millets.
