Creamy Apple Broccoli Walnut Salad

Creamy apple broccoli salad reminds everyone of a childhood favorite – Waldorf salad. This salad is crunchy and so satisfying that I can finish a bowl myself! The dressing is made extra creamy with Greek yoghurt and mayonnaise so that it’s fresh, light, and very low calorie count.

Hey guys! Meet my new favorite salad. Yeah I know that’s saying a lot because I just shared a Mediterranean quinoa salad which I also love love love. But you know these two are different and have different reasons to eat them in life.

You feel like you are consuming something that is borderline unhealthy, but it’s not so because unlike all other creamy salads in the world – this one has half the mayonnaise which is subbed with Greek yoghurt. Purrrrrrfeeeeect.

 

RAW VS. BLANCHED BROCCOLI

A lot of broccoli salad use raw broccoli, but I prefer broccoli that’s blanched, say for about 30 seconds. This takes away the raw flavor, and gives broccoli a bright green color. It makes it safer too because vegetables like broccoli and cauliflower have worms that go unnoticed. However, if you prefer eating broccoli raw salads, feel free to eat it. The salad is refrigerated for an hour before serving which will make the broccoli slightly tender.

WHICH APPLES ARE BEST FOR THIS SALAD

I’ve used ‘Washington apples’ in this recipe which are bright red, firm and really crunchy. But I’ve also tried this with a mix a tart green and sweet red apples and that tastes fantastic as well. Look for apples which don’t have bruises on the skin, are firm and don’t have any mushy pockets when you press them.

For the Salad Dressing

  • 1/3 cup Greek yoghurt
  • 1/3 cup Mayonnaise
  • 1 ½ cup tablespoon Apple cider vinegar
  • 3 tablespoon honey

For the Salad:

  • 3 cups Broccoli Florets
  • 1 apple, cored and sliced thinly
  • ½ cup chopped Walnuts
  • 2 medium-sized carrots, cut into matchsticks/julienned
  • ½ cup chopped red Onions
  • 3 tablespoons raisins
  • 3 tablespoons dried cranberries
  • 3 tablespoon pumpkin seeds
