The Punjabi Rasoi at The Hebbal Cafe of Courtyard by Marriott Bengaluru Hebbal, has prepared a rich, authentic, and finger-lickin’ excellent Punjabi cuisine. Chef Shanna Oberoi’s ideology for this food festival was to bring in the authentic taste of Punjabi cuisine by reviving the old recipes which were forgotten through the generations.
Some of the signature dishes presented at The Punjabi Rasoi are chicken butter masala, paneer butter masala, kheer, sag, lassi, sarson da saag and makki di roti, varieties of parathas, aloo paratha, gobi paratha, mooli paratha, patyala machi.
Love, passion, dedication and patience are the most important ingredients that Chef Shaana Oberoi uses while preparing her dishes. When asked, she mentioned, “Cooking is done with a lot of love and patience, that makes it the key ingredient.”
Shanna Oberoi, being from an education background is now pursuing her passion for cooking. She shared some insights about her journey, how she was not given an opportunity to become a chef just because she did not have a professional certification for it. It was JW Marriott and Sheraton who came forward and gave her this opportunity. She expresses how thankful and grateful she is to them for promoting and believing in chefs like her.
When asked if chefs make mistakes, Shanna Oberoi responds how it’s never a mistake but a creation of a new dish. “Every Chef’s first Guru or teacher is their mother, and all culinary innovation begins with her. I’m the voice of those thousands of mothers who have not got honoured for their cooking”, she mentioned.
Today’s young budding women chefs should just come out of their kitchen and explore the world. Shanna Oberoi’s most important advice is to never shy away and start doing what you love, no matter how small it is or how much others discourage it. “The rest of the world is waiting for you,” she said.
