Earth Day is being celebrated across the world on April 22, 2024, and it is being celebrated by more than 1 billion people who are supporting and advocating for the well being of planet Earth. One might wonder what exactly is being done to celebrate something so vital? Well, people have taken charge of educating their future generations about climate, and the major topic that is being taught is how to avoid the use of plastic. This year and on this day, everyone must concentrate on the never ending war of plant vs. plastic! Plastics harm our planet in so many ways that we can recount on that everyday. Plastics contribute to producing GHGs, i.e., greenhouse gases, which contribute to climate change. It is on such an aggravating scale that by 2060, GHG emissions will account for 4% due to the excessive usage of plastics. Microplastics: The major component that is used to make plastics is oil, and it is directly affecting the fossil industry. Unfortunately, a major part of the waste plastics is never recycled and is left just lying around and that is killing wildlife at a very rapid pace. And now there is some eye-opening evidence that shows that we are inhaling plastic particles (microplastics) at alarming levels. Along with microplastics, we are also ingesting the harmful chemicals released by them. We don’t have the functions that will support the digestion of these microplastics, which is the major reason for all the risks and diseases. The sad part is the ingestion of microplastics not just happen as adults; it occurs at the infant levels as well. Recent studies on placentas have shown the positive presence of microplastic. The elderly are also not being spared by this and it has become the major reason for cancer, Alzheimer’s, and heart troubles too. During the plaque removal, doctors found polyethylene microplastics in 60% of the patients. We may not be able to eradicate the intake of microplastics but we can always mitigate their intake. How? 7 ways to avoid the ingestion of microplastics, considering Earth Day: Avoid too much of Red meat! It has been proven that it carries microplastics. Also in shellfish, the amounts of it is alarming and on consumption, they remain in the digestive tracts. Make proper protein choices in your food to save your digestive system. The dust particles in your house contain dangerous amounts of particles, so try to clean and dust as much as you can. The single-use bottles are also not so great to use because they contain 240000 nanoparticles of plastic in one serving. So choose wisely! Avoid using plastic containers to reheat your food in the microwave, as the heat releases plastic chemicals like BPA. Avoid using plastic based or packaged toiletries and self-care products. Avoid eating root vegetables, as they have higher particles compared to vegetables and other plant based foods grown above the ground. Avoid wearing polyester, as it is a textile that is made out of plastic and microplastics are shed through it. And those particles we end up inhaling. These microplastics can be reduced if everyone across the world knows how to minimise their dependence on plastic products. The more we use plastic-based products and foods, the more we are hurting ourselves and this planet. This planet is the only one that has life existing on its surface (as far as we know). Building your life on the basis of what products you use and what you eat will decide the future of the planet and your children as well. So starting today, let us follow these minute steps globally to start changing your wellbeing in a positive direction, and it will also save the planet for our future generations. And remember, we are the ones who need Earth; it is not the other way around. The toppings for besan-gehun crisps with some daal include chopped onions, tomatoes, green chutney, saunth, chilies, garlic nibs, lemon juice, and garlic oil. Whether enjoyed as a snack on the bustling streets of India or served as an appetizer at home, dal ki chaat never fails to delight with its vibrant flavors and satisfying crunch. Gosht Chilli Murgh Tikka: Gosht Chilli Murgh Tikka is a tantalizing fusion dish that combines the succulence of gosht. Sigdi grilled chicken tikka marinated with bhoot jolokia, served with some smoked carrot-coconut puree and carrot-pumpkin seed salad on the side. Tender pieces of chicken are marinated in a rich blend of yoghurt, spices, and herbs, infusing them with a depth of flavor that is both robust and aromatic. The marinated meat is then grilled or roasted to perfection, imparting a smoky char and locking in the juices for maximum tenderness. Timbri Jhinga: “Timbri Jhinga” is a dish that might be a regional or local specialty, and without specific context, it’s challenging to provide a detailed description. However, “Jhinga” typically refers to prawns or shrimp in Indian cuisine. “Timbri” could be a regional or local name or a specific preparation style. Timbri marinated prawns grilled on sigdi, then smoked, served along with pea shoot salad and bhang jeera chutney on the side. Kathal Baigan Bharta: To prepare this dish, the jackfruit and eggplant are typically roasted or grilled until they’re soft and charred on the outside. Then, the skin is removed, and the flesh is mashed or finely chopped. A blend of fried kathal and roasted baigan, tossed in some chef’s special spices, garnished with baigan chips, fried kathal strands, and finished with apple wood smoke. Peppay Waale Aloo “Peppay Wale Aloo” is a dish that likely features potatoes (aloo) cooked with “peppay,” which could refer to a specific type of pepper or chili. Since Amritsar is famous for the varieties of anchaar, we have used pickling spices in peppay wale aloo and prepared it authentically in peppa. Baby potatoes with crushed wadi spiced with achaari masala and prepared authentically in peppa, garnished with microgreens and achari mirchi.   Kangra Khodiya Gosht: Inspired by “Khatta Meat,” which is a delicacy in Himachal Pradesh where meat is cooked in tomato-yoghurt gravy. Khatta meat inspired pahadi mutton curry infused with walnut ink garnished with fried red chilli and roasted walnut, a specialty from Kangda. “Twenty years ago, when there were no cellphones and passport offices were inconvenient to reach, I had a once-in-a-lifetime opportunity: an offer letter and plane tickets to London for a job I couldn’t refuse, but I had only three days to secure a visa”. Pravesh Pandey, a business mogul, Food and Beverage leader, and owner of Bangalore’s largest craft house, Roxie, says, “I am happy I was able to sail through my struggle then and I am happier where that he led me now” to The Style.World Pravesh got his start in the hospitality business as a barman. Being in a pub used to be a different game back then, he says. He has a passion for communicating with people and a wealth of fascinating stories to share with his guests. He moved from his hometown of Varanasi to seek employment in the larger cities of Bombay, Kolkata, and Delhi. Pravesh is a man full of life and excitement, having had the opportunity to work on a cruise ship, traversing the world for three years on work, and then returning to India to work at well-known restaurants like Shiro, Hard Rock Café, Smoke House Delhi, and travelling south to serve as COO for brands like Byg Brewsky. To better grasp his life’s ultimate significance, he infused his job with CSR initiatives. He learned his true calling from a monk in the Himalayas: “Learn, Earn, and Return.” He feels a personal, rather than a business, need to give back to the F&B industry, which he has studied extensively and which employs him the most. Which brings him back to the period of covid, when there were summers but a pandemic had struck and people went hungry. The uproar that ensued when a commoner came in his automobile and seen people fighting over ration packages made him know he had to take action in order to return to the community and address a practical issue of the world. Offering affordable meals for the blue-collar workforce (often costing between 25 and 30Rs), Bisi Bisi Oota was his initiative to provide free breakfast and lunch to individuals living in slums, rural regions, and on the roadways. He opened seven more stores when the response was so great. When the non-governmental organisation Pragati got behind his idea, it allowed him to create a more inclusive environment in which people from all walks of life—from autistic children to adults with autism—could participate in the preparation of food. He employed autistic adults to wash vegetables, adult women to run the kitchen, and adults to serve as front-of-house staff. These days, those ladies run their own businesses while still raising families and providing for their communities. The goal of Pravesh Pandey is to equip people from outlying regions with marketable skills and assist them launch successful professional careers. His second project, Releski (get REcruited by LEarning the SKI-lls you need), used an app to teach seven or eight distinct regional languages. Thanks to swiggy, he was able to network with over 80,000 restaurants and provide training for their employees. He’s glad he did it and hopes to keep doing bold actions like that in the future. Pravesh’s intrest of the technology industry and his ability to combine food and technology led to his joining at Zomato before he started his own restaurant . He realized the other side of the food industry and became a better entrepreneur after seeing how people may order any kind of cuisine from the comfort of their own homes using only an app. But he also knows that it’s important to strike a good balance between the two, since humans are irreplaceable and technology can’t replicate a restaurant’s ambiance, while technology is essential for streamlining processes in key financial areas. The entrepreneurial Pravesh admits, “If there’s one lover I haven’t slept with, it’s food.” At age 9, he began to show an interest in cooking for his family and friends, and he has enjoyed preparing a wide variety of dishes ever since. Though he was raised in a vegetarian household, he had always been curious about meat and fish dishes. His interest in cuisine and the skills he gained in his Hotel Management school have given him the freedom to try dishes from all around the world. Pravesh’s passion is in the kitchen, where he can best utilise his skills to satisfy the palates of his patrons. He like the part of the job when he gets to sit with the chef and try the cuisine before it is served to the guests. After 15 years in the industry, Pravesh decided to go out on his own. The help of Roxie has allowed him to move his ideas forward. He’d rather accomplish something meaningful and memorable that will make others happy than just fill time. Even as he plans to open new locations around the country for his restaurants, he is also working to make his business an attractive option for potential investors.
