Mango Mania by Gourmetised! As we all know mangoes are in season and most of them crave for it during the summers. Gourmetised, a healthy culinary initiative started by Vimki Giria. She is a culinary adventurer, a recipe developer, Menu consultant and a Nutrition consultant. She curates recipes of both Indian and International and her videos on Zayka ka Tadka showcase simple daily cooking. Vimki also promotes gourmet style healthy cuisines and specializes in bio-individual vegetarian and gluten free diet plans. She does regular online classes and workshops as well. Here are a few summer recipes for the mango freaks! Golden Summer Salad Ingredients  2 bowl of mixed lettuce, spinach, spring onion greens, coriander, mint and dill ½ cup diced mango ¼ cup diced avocado ¼ cup diced onions ¼ cup diced yellow bell peppers 2 tbsp diced cucumber 2 tbsp diced tomato 2 tbsp diced pineapple For the dressing, 2 tbsp olive oil 2 tbsp lemon juice Salt and pepper to taste  1 tsp honey ½ tsp cumin powder 2 cloves of garlic minced Method  Whisk the ingredients of the dressing well. Toss it in the salad right before serving. Tip: you can also add some boiled quinoa or rajma/kidney beans to make it into a meal. Mango Gazpacho This Mango gazpacho is an unexpectedly wonderful twist to a traditional savory recipe! Ingredients 2 cups mango puree 2 cups orange juice 1 yellow bell pepper 1 cucumber 1/2 onion 2-3 cloves of garlic 2 tbsp chopped jalapeno 2 tbsp chopped coriander Salt and pepper to taste To garnish Finely chopped mix of cucumbers and bell peppers Few coriander sprigs Method Puree all ingredients together in a blender until smooth. Season well with salt and pepper. Chill in fridge for at least 2-3 hours. Serve in bowls, garnished with the veggies and coriander. Mango Kale Cups Ingredients  1 bunch curly Kale For the mango salsa 1 mango chopped 2 tbsp onion chopped 2 tbsp tomato chopped 1 tbsp jalapeno chopped 1 tbsp coriander leaves chopped Salt and pepper to taste 1 tsp lime juice For the tofu 100 gm tofu cubed 1 tbsp sesame oil 1 tbsp soy sauce 1 tbsp Sriracha sauce 1/2 tbsp vinegar Method Destem and wash the kale and dry it. Mix all the ingredients of the salsa together and set it aside for 30 minutes. Mix the sauce and vinegar together and coat the tofu and marinade for half an hour. Ina non-stick pan, heat the oil and cook the tofu on both sides until brown. To assemble, in a kale leaf, heap a spoonful of the salsa and top with tofu pieces. Serve immediately. Mango Choco marble cake Ingredients  1.5 cup whole wheat flour 1 tsp baking powder 1/2 tsp baking soda Pinch of salt 1/4 cup oil 3/4 cup sugar 1/4 cup curd 1/4 cup milk 1 cup mango puree 1 tsp vanilla extract/essence 2 tbsp cocoa + 2 tbsp water Method In a bowl mix the dry ingredients like flour, baking powder, baking soda and salt together. In another bowl whisk the oil, curd, milk and vanilla essence. Now add the dry ingredients to this mixture and combine. Next, divide this batter into 2 bowls. To 1 bowl, add the mango puree and to the other bowl add the cocoa-water mixture. Preheat the oven to 180°C. In a greased cake tin, add a big spoon of the Choco batter and tap the tin so it can spread. Now add a big ladle of the mango batter right at the centre and tap the tin so it covers the choco batter, leaving an inch from the edge. Repeat this process until the entire batter is used up. Take a toothpick and make lines from the centre point on the tin towards the edges – making 16 lines in all. Place the tin inside the oven and bake for 30-35 min. Mother’s should be celebrated every day and this day is a special opportunity to show some extra love. Here are some simple recipes by Abdul Sahid Khan, the Head Trainer of Lavazza India for some lip smacking delicacies for celebrating Mother’s Day. Saffron Latte Saffron Latte, a creamy espresso-based latte with subtle sweetness and earthy flavour of saffron. If she loves a latte, adding a few threads of Kashmiri Kesar, the world’s most expensive spice, adds a subtle sweetness and aroma that she’s sure to love. Ingredients 3/4 cup whole milk 3 to 4 saffron threads, crushed 30ml espresso Directions In a small saucepan, heat the milk and saffron over medium-low until hot for 3 to 5 minutes. Remove from heat and whisk until thick and foamy. Pour the espresso into a mug and top it up with saffron milk, and serve. If one does not have espresso at home, they can try with 40ml decoction of II Matino brewed in a filter. Classic Mocha with Mint Classic Mocha with Mint, is the ultimate mocha coffee recipe for your mom if she loves chocolate. It is a combination of Coffee, Chocolate, Mint and Whipped Cream. Ingredients 40 coffee (moka pot/ espresso/ filter) 1 cup whipping cream 2 teaspoons mint syrup 2 teaspoons chocolate syrup 1 sprig mint, for garnish Directions Whip up the whipped cream to soft peaks while the coffee is brewing and add 1 teaspoon of mint syrup. Once the coffee is done mix 2 teaspoons of Chocolate syrup with 1 teaspoon of mint syrup. Top the coffee with mint whipped cream and a sprig of mint before serving. Garnish it with some extra chocolate chunks if you love chocolate. Espresso Lemonade Expresso Lemonade, a perfect summer drink with an extra dose of caffeine. Served with a bit of lemon peel and fizzy soda. It tastes bright and full-bodied fizzy blends lemon soda with a cool shot. Ingredients 150ml club soda 60ml cold espresso 1 or 2 lemon wheels 6-8 ice cubes Sugar syrup as per your taste Directions Pour lemon soda over 6-8 ice cubes and top with espresso and add sugar syrup if wanted. Stir and add a lemon wheel and enjoy. Instead of espresso you can use Qualita Rossa brewed in Moka Pot.  Mother’s Day can be celebrated with these curated recipes with no trip to the coffee shop.
